A 5 Minute Meal | Layered Southwest Salad

I was so eager to eat tonight that I devoured dinner without taking a picture. WHOOPS!

Sometimes I don’t feel like cooking at all. Sometimes when it is hot, I don’t feel like eating cooked food. Often, I am tired of being in the kitchen so I need something fast but healthy. This meal fits the bill. I adapted my recipe from this one, and used almost all organic ingredients. I layered the salad from the first ingredient to the last, then tossed–it was DELICIOUS.

Here is your grocery list:

  • romaine lettuce
  • corn
  • black beans
  • shredded cheese
  • tortilla chips
  • salsa
  • sour cream
  • avocado

That’s it! No cooking. Little clean up. Easy. Healthy. Fast. Doesn’t get much easier than that!

& caroline had her version of this…she picked up beans & corn one by one as we ate. (sharing every other one with Rusty boy) Then she had some avocado & cheese. Four happy campers in this house! :D
