Szechwan Beef Stir-Fry | styleberryKITCHEN Pt. 5

I am listening. & finishing what I started. You all seem to have enjoyed styleberryKITCHEN so far (at least that is what you are telling me on facebook) so although I have pushed it aside, I do have a couple more posts for you. :) This is one of my FAVORITE meals. & it is fast, easy & healthy. A one plate meal that includes all your food groups. Nothing better than that!

I was not raised on ethnic food. My mother did all the cooking & she cooks the Wisconsin cuisine…cheese, butter and more cheese. This is what I knew to be cooking…big extravagant meals, all very German/Swiss American in nature. & then I met my husband, who has an Asian mother. Let me assure you that being well fed with spice & meat his whole life, we had a bit of a collision of values in the kitchen. Over the years, I have come to really enjoy Asian food & his mom is kind enough to send me some excellent recipes to add to my rotation. This happens to be one of the recipes she gave me. I have no clue where it came from so I attached my color copy that I scanned. I figure it’s just as good as typing it out…and it adds character because you can see how well loved it is!

I used beans instead of snow peas this time. I prefer peas, but beans are an ok green substitute. You can find the corn either jarred by the olives or canned in the Asian section of your grocery store. I usually have to go to World Market to get it here in South Texas. TX is not very supportive of Asian cooking. :( & what do I do with caroline while I am cooking? There she is. Never too far.

I wanted to show you exactly how I slice my beef. I used sirlion, just because we tend to prefer it. Slice it nice & thin.

This was caroline’s whole dinner too. She ate it all. :) so for those of you with kiddos–this is a great low-effort meal for the whole family.
