The Three Minute Lunch | FAB 50:4

I was making this for lunch today & thought you’d probably like a new idea for lunch. I know I always do–& please share if you have an easy one!! I timed myself–it literally took three minutes to throw together. SCORE. You could get all the ingredients at Costco if you wanted to make it a one stop shop. The Quinoa is sold in six packs–and I only eat a half of one when I make it like this (everett sometimes eats the other half). So the totals are: half a Quinoa packet (you microwave it for 90 seconds), a whole avocado, three or four small dollops of sour cream (I believe in full fat) & a few spoonfuls of salsa. Sometimes I add cheese. But since cutting out an everett feeding recently, I have to start being more mindful of extra calories, so that is a really easy way to cut. I don’t even miss it. YUMMY. ENJOY!

Bobbi Kae Watt - It is rare that I actually get to try your ideas (although I wish I could try them all). However, this time I tried two…we made the horse (which was super fun to make and is a hit!)and I tried the quinoa clean, quick meal…LOVE it! Thanks Shawna!! :)

Lindsay - Love it! I make something similiar for my family for dinner. We call it “Qdoba” night (naked burrito). I add black beans to it and use store bought pico instead of salsa. I sometimes will buy a green salsa as well to throw on top. I don’t use sour cream, but instead keep the cheese. I’m a cheese girl. :) I acutally bought the ingrediants to make for dinner this week!

Robyn - Hi, Shawna! Thanks for the lunch idea! I’d love to hear more about your exercise and eating! I’m trying to move away from “diet food” and toward cleaner, more “real” meals. You always have such great, thought-out ideas!

Jessica - Hmmm….Quinoa in 90 seconds? That’s tempting. I always struggle with grains because they take so long to cook. And although I try to make them at the beginning of the week, I often don’t :) I will be sure to try this!
