Hmmm….Quinoa in 90 seconds? That’s tempting. I always struggle with grains because they take so long to cook. And although I try to make them at the beginning of the week, I often don’t :) I will be sure to try this!

Love it! I make something similiar for my family for dinner. We call it “Qdoba” night (naked burrito). I add black beans to it and use store bought pico instead of salsa. I sometimes will buy a green salsa as well to throw on top. I don’t use sour cream, but instead keep the cheese. I’m a cheese girl. :) I acutally bought the ingrediants to make for dinner this week!

It is rare that I actually get to try your ideas (although I wish I could try them all). However, this time I tried two…we made the horse (which was super fun to make and is a hit!)and I tried the quinoa clean, quick meal…LOVE it! Thanks Shawna!! :)
plain greek yogurt would make a healthier substitute for sour cream
